1/2 cup boiled quinoa
1/2 cup red/ black beans cooked
1 avocado
5 leaves organic salad
1 tomato
1 red onion
1 small cucumber
1 handful coriander
Juice of one small lemon
1 tablespoon olive oil
Cut up the avocado, tomatoes and onion. Chop up the coriander. Mix all the ingredients
together. Add salt to taste and squeeze in the lemon. Perfect. Enjoy your salad
